Lesson 4 - Malting Process
This lesson deals with the malting process. We investigate each stage of the malting process in detail. We describe the required physical and biochemical changes involved in the conversion of barley to malt. We also discuss the vessels used for malting and explain how they help to produce malt of optimum quality.
Preface
Malting has taken place for thousands of years. Historically, people recognised that sprouted grains had advantageous properties compared to those that remain unsprouted.
Over time, through improvements in science and technology, malting has developed from a simple small scale enterprise, to a tightly controlled industrial operation. As a result of this development, malt and beer quality have been immeasurably improved.
