Lesson Sign-off

This lesson dealt with the technology used to recover and purify carbon dioxide (CO2) which is a co-product from brewery fermentations. Purified CO2 is used throughout the brewery to carbonate liquids and also to purge air (oxygen) from containers and vessels. We considered the role that fermentation and fermenter block operation have on the availability of CO2 for collection, as well as the technologies and plant involved in collecting, purifying, and liquefying CO2 for use back in the brewery.

You should now be able to:

  1. Describe and calculate the CO2 production potential of a brew/fermenter defined in terms of wort volume and OE.

  2. Calculate the overall collection efficiency of a CO2 recovery plant, over time, against a brewing schedule.

  3. Describe the function of various approaches to switching tanks over from CO2 vent to CO2 collection and suggest their appropriateness for differing sized brewing operations.

  4. List the key processes of a recovery plant and their principles of operation.

A self-assessment lesson now follows, which will allow you to determine the level to which you have attained the above outcomes.
