Point of Reflection - Reconvene

Welcome back. So, what were your thoughts?

We need to be careful.  Higher temperatures could gelatinise any residual small starch granules in the grain bed. The malt amylases are no longer active at these higher temperatures to saccharify the starch. Unless we have added a heat stable amylase to the mash, the solubilised starch will pass forward. Later, this cooled starch can retrograde and become a problem during beer filtration.

We will now consider the impact of grain bed depth on filtration flow rate.
