This lesson deals with malt quality. We explore each parameter on a malt specification sheet and identify why they are specified. We then examine how they affect beer and the brewing process.

- Explain why malt quality is important to the brewer.
- Understand and discuss the tests conducted on malt in accordance with IoB, ASBC and EBC methods.
- Evaluate the effect of malt analytical parameters on the brewing process.
