Lesson 4 - Gas Transfer
This lesson focuses on transferring gases into and out of solution. It looks in particular at carbon dioxide dissolution in water and beer, and explores how to manipulate pressure, temperature, and gas composition to influence the saturated gas concentration (as well as the rate of gas transfer). It also looks at some tabulated data that are widely used in the industry. The lesson concludes by describing gas transfer technology.
Lesson Sign-off
In this lesson we focused on transferring gases into and out of solution, with particular emphasis on carbon dioxide dissolution in water and beer, and how to manipulate pressure, temperature, and gas composition to influence the saturated gas concentration and also the rate of gas transfer. We also looked at some tabulated data which are widely used in the industry. We concluded the lesson with some descriptions of gas transfer technologies.
You should now be able to:
-
Describe and apply Dalton’s and Henry’s laws to gas mixtures in order to calculate saturated concentrations of dissolved gases in liquids.
-
Use CO2 saturation tables and correlations to determine saturated concentrations of CO2 in beer.
-
Describe the process of super-saturation and how to avoid it or promote it.
-
Describe the key parameters which affect the rate of gas transfer and recommend methods for gas transfer rate enhancement.
-
Describe common examples of gas transfer technology.
A self-assessment lesson now follows, which will allow you to determine the level to which you have attained the above outcomes.
