Lesson Sign-off

This lesson dealt with the chemistry of hops. We focused on the components that affect both beer flavour and aroma.

You should now be able to:

  1. Be able to give an overview of the key chemical components of hops, and how each core component affects beer.
  2. Describe how the individual components of the resins are modified during the brewing process, and how they affect beer bitterness.
  3. Classify the hop oil composition, their effect on beer flavour and aroma, and typical levels in beer.
  4. Be able to choose which hops to use in a beer, based upon a hop analysis and intended final beer flavour (generally).

A self-assessment lesson now follows, which will allow you to determine the level to which you have attained the above outcomes.
