Lesson Sign-off
This lesson dealt with the chemistry of hops. We focused on the components that affect both beer flavour and aroma.
You should now be able to:
- Be able to give an overview of the key chemical components of hops, and how each core component affects beer.
- Describe how the individual components of the resins are modified during the brewing process, and how they affect beer bitterness.
- Classify the hop oil composition, their effect on beer flavour and aroma, and typical levels in beer.
- Be able to choose which hops to use in a beer, based upon a hop analysis and intended final beer flavour (generally).
A self-assessment lesson now follows, which will allow you to determine the level to which you have attained the above outcomes.
