Lesson 3 - Wort Separation Principles SAQ
This lesson provides the opportunity for you to test yourself on the material covered in Lesson 2 on Wort Separation Principles. It allows you to determine to the level to which you have attained the learning outcomes.
Suggested Response - Q5
**Sketch a typical wort collection profile showing gravity and volume. Identify the different process stages. Demonstrate how kettle gravity could be increased by 10% without loss of extract efficiency.
Response:
Use a graph to demonstrate your response. You could use the one provided in the lesson, or one that you are more familiar with. You should show the x-axis as wort volume, and the y-axis as wort gravity. Identify the following process phases: collect strong worts, start sparge, collect sparged worts, and last runnings cut off. Then overlay with the kettle gravity. To get a 10% increase in kettle gravity, stop sparged worts collection at about 90% of wort collection volume. You need to collect this last 10% of sparged worts as weak worts to maintain 100% wort recovery. The saved weak worts are used either as sparge water or mashing water in future brews.
