Lesson 6 - Wort Separation Process Control
This lesson deals with wort separation process control. The different methodologies of measuring and calculating extract recovery are explained and demonstrated. A methodology is explored, as is how to investigate and resolve performance issues with extract efficiency, wort quality, and cycle time.
Cycle Time and Brews per Day
We have already seen that troublesome mash separation can result in poorer clarity worts. The other major impact is to increase cycle time. If the mash separation device is the rate limiting step of the brewhouse process, then this will reduce our brews per day that can be processed and therefore our brewhouse capacity.
Point of reflection: What are the most likely parameters that will cause slower than normal wort separation? Give yourself 5-10 min to think about this and then click ‘Next’ to continue the lesson.
