This lesson deals with wort separation process control. The different methodologies of measuring and calculating extract recovery are explained and demonstrated. A methodology is explored, as is how to investigate and resolve performance issues with extract efficiency, wort quality, and cycle time.

Welcome back. So, how did you get on?
We can either calculate in kg extract or L˚ extract. Firstly, you should have corrected the malt extract value for moisture, and then calculated the kg of extract added or the hL˚ extract added. Then you needed to calculate the kg of extract recovered, or hL˚ extract recovered. This allows you to work out the percentage efficiency. Either method calculates a ~99.3% extract efficiency.
