Lesson 6 - Wort Separation Process Control
This lesson deals with wort separation process control. The different methodologies of measuring and calculating extract recovery are explained and demonstrated. A methodology is explored, as is how to investigate and resolve performance issues with extract efficiency, wort quality, and cycle time.
Brewhouse Performance
The key measures of brewhouse performance are throughput, extract efficiency, and wort quality. Wort separation has a major impact on all of these.
Wort separation is frequently the rate-limiting step in the brewhouse process. It determines the frequency at which we can mash in, or our maximum number of brews per day. We are completely dependent on wort separation to recover all the extract created at mashing. We need the separated worts to be clear for quality reasons.
We are now going to focus on extract efficiency.
