Suggested Response - Q2

***You are working on a project which will be installing a new fermenting vessel and associated pump, valves and pipework. What specifications would you give potential suppliers to ensure it is hygienic?

Response:

Hygienic design has three main components:

  • Material

  • Equipment

  • Installation

Let us address each of these in turn.

Material

For all the components mentioned above, SS304L would be adequate as it is both hygienic and is suitable for the conditions encountered (mainly cold application, must handle beer and both dilute caustic and acid cleaning chemicals).

A finish of 2B is required. This is the minimum standard required to ensure that the surface is smooth and therefore hygienic.

Equipment

The main pieces of equipment for installation includes the vessel, pipework, pump, and valves. Below are the hygienic requirements for each:

  • Vessel

    • Bottom draining

    • All inlet, outlets and fittings cleanable with CIP liquid

    • Any manholes raised

  • Pipework

    • Any seals or gaskets must be hygienic

    • Lines to be self-draining

    • Eccentric reducers used

    • No dead legs

  • Pump

    • Pump must be certified hygienic

  • Valves

    • Valves must be certified hygienic

Installation

  • Welding procedures must be followed

  • A set percentage to be inspected with X-rays
