**For each of the following pairs choose the most hygienic option and give a reason for your answer.
Response:
a) B. Eccentric reducers ensure that there is no pooling of product and the line can be self draining.
b) A. All tanks should be able to completely drain.
c) A. Any equipment which can leak substances such as oil that is situated over the product should be installed such that nothing can end up in the product. This is especially relevant for equipment installed above tanks.
d) A. Beam supports should prevent the build-up of dirt on them.
e) B. Welding should be continuous as discontinuous welding creates crevices where dirt can accumulate.
f) A. Bypasses should be installed in such a way that product and CIP liquid can flow through it all the time.
