Suggested Response - Q1

**What systems can be used to validate the CIP system effectiveness? List the various checks that can be used.

Response:

The quality system for CIP should cover both the inputs and the outputs of cleaning. A QA plan will describe equipment and process checks, standards, accountabilities, methods, and frequencies. The execution of this plan, along with the recording of results and their reactions, form the QC part of the quality system. The following should be covered:

CIP operation

  • A supervisory system that monitors temperature, pressure, jet validation, flow rate, and conductivity (detergent strength).
  • An operator to confirm detergent strength with titration.
  • A maintenance schedule on vessels: this should include spray device inspection and physical inspection of the vessel surface. Epoxy lining integrity can be checked with dielectric or spark tests. Weld integrity can be checked with dye penetration testing.
  • The operator checks the vessel, or main rinse sample, for residual detergent.

Tank cleanliness

  • Operator to take rinse samples to check for ATP (covered in the Microorganism Detection and Control lesson).
  • Laboratory micro-check on rinse samples and tank swabs for bacteria and wild yeast.
  • Laboratory micro-check on CIP compartments and rinse water.
  • Visual tank inspection for cleanliness.
