Lesson 7 - Wort Separation Process Control SAQ
This lesson provides the opportunity for you to test yourself on the material covered in Lesson 6 on ‘Wort Separation Process Control’. It will allow you to determine the level to which you have attained the learning outcomes.
Suggested Response - Q3
*Explain two techniques to determine wort clarity, and provide typical values expected from the mash tun, lauter tun and mash filter.
Response:
Clarity can be determined visually. However, more objective assessment is provided by measuring the background haze of the wort as EBC units, and measuring the settleable solids as mL/L.
Table: Typical clarity and settleable solids values in wort
|
Average during wort collection |
Mash Tun |
Lauter Tun |
Mash Filter |
|
Haze EBC |
< 5 |
< 10 |
< 2 |

Selltleable Solids mL/L |
< 0.5 |
< 1.0 |
< 0.2 |
(Reminder – Haze is 10x higher than settleable solids.)
