Lesson 7 - Wort Separation Process Control SAQ
This lesson provides the opportunity for you to test yourself on the material covered in Lesson 6 on ‘Wort Separation Process Control’. It will allow you to determine the level to which you have attained the learning outcomes.
Suggested Response - Q1
*What is extract? Provide two common units of measurement used to determine the concentration of extract contained in wort.
Response:
Extract is the mass of dissolved sugars present in a given volume of wort.
The two common units of measurement to determine the concentration of extract contained in wort are Specific Gravity and ˚Plato
Specific Gravity is the ratio of the mass of a given volume of a solution at 20˚C compared to the mass of the same volume of water at 20˚C. We need to measure this at a standard temperature, as density changes with temperature. It has no units.
˚Plato is a measure of the grams of extract in 100 g of wort (% w/w) at 20˚C. For example 9 g of sugar dissolved in 100 g of wort (91 g of water) is 9 ˚Plato (Plato is actually based on the sugar sucrose, but our wort sugars give very similar results).
