Lesson 8 - Malt Final SAQ
This lesson allows you to test yourself on the material covered in all previous malt lessons and determine the level to which you have attained the outcomes.
Suggested Response - Q1
**What would you expect to see if you visually analysed malt that was produced from barley affected by drought? How would this affect brewhouse processes?
Response:
Barley kernels develop first in length, and then in width. During a drought, the kernels will reach a normal length, but their width during grain filling will be less than optimal, resulting in thin kernels. Thin kernels have higher nitrogen and lower starch. With regards to brewhouse processes, the mill gap might have to be adjusted to compensate for the thinner kernels; you will need to use more malt to achieve the desired extract.
