In this lesson we take a closer look at water from a utilities perspective. We will consider different forms of water treatment and look at the equipment required and operation thereof. The focus will be on treatment required for process and service water. Water chemistry will not be covered in any detail, as this is covered in Diploma Brewing Module 1.

In this lesson we take a closer look at electricity from a utilities perspective. We will review the basics of electricity and consider the different forms (direct current and alternating current, single phase, and three phase) and voltages. The basic reticulation systems within the brewery will also be covered

In this lesson we take a closer look at gases, including compressed air. We will look at the quality requirements and specifications for use in the brewery. Different compressed air generation methods will be considered. For nitrogen and oxygen, we will look at the common uses, quality requirements, and options available for supply, storage, usage, and generation.

This lesson explores the technology used to recover and purify carbon dioxide (CO2), which is a co-product from brewery fermentations. Purified CO2 is used throughout the brewery to carbonate liquids and to purge air (oxygen) from vessels and packaging containers. It examines the role that fermentation and fermenter vessel operation has on the availability of CO2 for collection, as well as considering an overview of the technologies and plant involved in collecting, purifying, and liquefying CO2 for use back in the brewery.
