This lesson explores the processes of warm maturation and cold maturation. Warm maturation can also be described as flavour maturation This process removes negative or unwanted flavours from the beer post-fermentation. Cold maturation occurs at lower temperatures (below 0°C), which in turn causes haze-forming components to form. These components can then be removed by precipitation or clarification via centrifuge or filtration. This lesson highlights the importance of these processes, how they affect the quality of the final product, and how we manage these maturation steps.

This lesson discusses beer clarification via centrifugation. Clarification removes yeast and solid particles from the beer in order to make it ‘bright’ or reduce the amount of haze. Centrifugation is one method that we can use to clarify beer. This lesson looks closely at the physics of centrifugation and the concept of accelerated gravitational force. By the end of the lesson, you should understand the importance of this process and its impact on final beer quality.

This lesson discusses the function of process aids and how they improve colloidal stability. It also explores filter aids, post-fermentation additions, and the use of deaerated water as tools to enable a brewer to meet their final pack beer quality specifications.

This lesson discusses the process of beer clarification via filtration. The filtration process primarily removes suspended particles from the matured beer to produce a clear stabilised beer that is ready for packaging. This lesson also discusses the importance of this process, the different filtration technologies available to the brewer, and the impact of filtration on final beer quality.

You have now completed the Maturation and Finishing Unit. This lesson enables you to test yourself on the material covered and to determine the level to which you have met the learning outcomes. It will provide you the opportunity to test your knowledge with a last set of self-assessment questions.
