Suggested Response - Q2

*Please indicate whether the following statements are true or false. If false, please say why you think this.

a)    A low difference in temperature between the wort and the steam reduces fouling.

b)    A larger heating surface area for the same rate of steam supply means a larger temperature difference between the steam and the wort.

c)    Increased fouling reduces the overall heat transfer coefficient.

d)    It is vital to evaporate water during wort boiling, to reduce DMS.

e)    Wort stripping with steam increases thermal load.

Response:

a)    True. If the heating surface is less hot, material in the wort is less likely to cook onto it.

b)    False. Using the equation Q=UAΔT, if Q and U are the same, an increase in A results in a decrease of ΔT.

c)    True. Fouling acts as an insulator that reduces the ease with which heat is transferred to the wort.

d)    False. There are other ways to remove DMS, including gas sparging or wort stripping.

e)    True. A bit of a trick question this one! Thermal load is the amount of thermal energy supplied to the wort. Therefore, passing wort down a stripping column with hot vapour flowing up it increases the amount of heat the wort is exposed to. That said, if the boil before the stripping is shorter and less heat is applied than a conventional boil (which should be the case) the total thermal load is less.
